We had this yummy quiche today and it was very good! It was actually made from quite a bit of things we needed to use up (eggs, sour cream, feta cheese, bacon) before they expired. This isn't how I normally make quiche but I figured I'd just give it a try. It was super easy!
I cracked 5 eggs into my mixer. Then I put in about half a container of frozen spinach that had all the water squeezed out, half a pound of chopped up cooked bacon, a 1/4 cup sour cream, about a good handful of crumbled feta and then some salt and garlic powder. And, a little touch of nutmeg (I learned long ago from Racheal Ray LOL to add nutmeg to anything with greens in it, it does give it a little kick!). Oh and we had just about 1/4 of a bag of shredded cheddar that was in the fridge and I threw it in there as well. That is my favorite way to cook, just throw things in and hope it tastes good, so far I have a pretty good record doing that, at least according to my husband! :) I cooked it on 350 for almost an hour, it took a while to get done in the middle.

i am going to have to try the nutmeg thing! sometimes i feel like my greens are lacking something. yum.bacon. this made my stomach growl.
