Parmesan Pesto Chicken Fettuccine

OK I know this doesn't look that great in the picture, but it was really good!  I had a jar of pesto and a box of fettuccine in the pantry that were expiring soon, so I wanted to find something I could make with them.  I tried doing something a little different and it came out pretty good.

Here is what I did...



Parmesan Pesto Chicken Fettuccine

3 chicken breasts
1 jar of Classico pesto (or equivalent of homemade)
1/4 cup parmesan cheese
4 oz cream cheese at room temp
salt to taste
garlic powder to taste (i used about 1/2 teaspoon)
1 box fettucine noodles

First, place the chicken breasts in an oven safe dish and pour the entire jar of pesto sauce evenly on top of the chicken.  Cook them at 350 until they are done (for me this was 25 minutes).  While the chicken is cooking, make the fettucine according to the directions on the box except when it is done, save about 1/4 cup of the cooking water (just to make the sauce a little thinner) before draining the pasta.  Place the pasta back into the pot (off the heat) with the reserved water, cream cheese, parmesan cheese, salt, and garlic powder.  Keep stirring the fettucine until the cream cheese has melted into the pasta.  Once your chicken is done, cut it up into bite sized pieces and put all of the chicken and also the pesto sauce into the pot with the fettucine and mix it all up. Serve immediately.
