We usually try to do a vegetarian meal or two per week. This week only has the potential for one, that being on Friday when we're having breakfast for dinner. I am trying to use a lot of the things out of the freezer this week (the meat on here is all in the freezer) so it is heavy on the meat this week. I also need to find some more vegetarian recipes so if anyone has any really good ones, let me know! I'm not planning lunches because we are going to be packing lunches much of this week since we will be out of the house. Breakfasts are always the same 3 or 4 options as well so I'm not listing them again this week, either.
Monday - Breaded Pork Chops, Seasoned Potatoes, Green Beans
Tuesday - Teriyaki Chicken & Rice, Broccoli
Wednesday - Tilapia, Lima Beans, Corn
Thursday - Pesto Chicken over Fettucine
Friday - Breakfast for Dinner
Saturday - Chicken Pasta Salad
Sunday - Leftovers

We do the opposite of you: one or two meat meals a week and the rest vegetarian. I use anything for a main dish that has dairy or eggs in it. Or I make a protein by matching legumes and grains (beans and rice, for exmample). We also eat a lot of soup in the winter - which is easy to make vegetarian.
