Hawaiian Chicken in the Crock Pot



This is a recipe that I have made a million times.  It is one of my husband's favorites, which is great since it is super easy to make and only has a few ingredients. I usually make it in the oven but today I decided to convert it to a Crock Pot version so that I could prepare it at nap time and have it ready to go by the time dinner was here.

We usually serve this with steamed green beans and put the chicken and sauce over a pile of rice.  It is super yummy!

4 chicken breasts *
1 bottle of your favorite BBQ sauce
1 can of pineapple rings, with juice

Place the chicken on the bottom of the crock pot.  Pour the BBQ sauce evenly over the chicken.  Place the pineapple rings on top of the chicken, spacing them out how you see fit.  You don't have to use the entire can, just use as much or as little of it as you like.  Then you want to pour the pineapple juice over the chicken.  (Actually, what I do is pour the pineapple juice into the BBQ sauce bottle, put the lid back on, and shake it up really good to get all of that BBQ sauce out of the bottle before I pour the juice onto the pineapple.  You can do it either way.)

Cook chicken on high for 4 hours.  If you need to leave it for a longer period of time, 6-8 hours on low should be OK.  Serve the chicken over rice with a bit of pineapple and sauce placed on top of the chicken.

* This can be done with a variety of different cuts of chicken, pick what you like best.  The above picture is using leg quarters because that is what we needed to use up.  We have used legs, thighs, breasts, and even leg quarters for this recipe.  If you use leg quarters, they will take longer to cook than noted above since they are bigger, so make sure to change your cooking time to account for that.  My husband prefers the thighs and I prefer the chicken breasts.  Using dark meat will make the sauce a bit fattier, if this bothers you then just use chicken breasts.  You can even use frozen chicken.  You can use more than 4 pieces of chicken, but just know that if the crock pot is too full it may increase your cooking time.

Also, please note that different crock pots cook at different rates, so always check your chicken and make sure it is fully cooked before serving.  These cooking times I mentioned above work great for my Crock Pot but I have heard that others that are older/newer may vary.
