A New Quiche
I had a lot of ingredients to use up from all of the great deals I've been gettinig at the grocery store so I decided to make up a new recipe with what I had. The result turned out really great so I wanted to post it here in case anyone else was interested in making it!
This literally cost me pennies to make and was so delicious! We served it with baked sweet potatoes and steamed broccoli.
Bacon, Caramelized Onion, and Feta Cheese Quiche

6 eggs
1/3 cup sour cream
8 oz bacon
1 onion (I used a yellow sweet onion)
4 oz crumbled feta cheese
salt
worchestershire sauce
nutmeg
1 pie crust (make your own or buy premade)
Preheat the oven to 400. Roll out your pie crust into a pan, or take your pre-bought crust and poke a few holes in it with a fork. Then put it in the preheated oven for 10 minutes or so to firm it up before filling it. While this is cooking, set a skillet on medium heat. Take the bacon and cut into small pieces and place it in the pan. Keep stirring it until it's seperated and starts to cook. Then chop up your onion and throw it into the pan with the bacon. Keep stirring until the onion is caramelized and the bacon is cooked. Meanwhile, wisk the 6 eggs and gradually add in the sour cream (try to get smooth), feta cheese, salt to taste, a pinch of nutmeg, and a splash of the worchestershire sauce. Once the bacon and onions are finished cooking fold them into the egg mixture until it is well combined. Pour into your pie shell and cook in the oven until the middle is firm (knife comes out clean). For me this is between 30 and 45 minutes. You can add shredded cheese to the top the last 5 minutes if you feel like you want more cheese, it does make a prettier presentation.
