I intended to make a crust for this quiche but I didn't realize it had to chill in the fridge so long until it was too late. So, we had crustless quiche. I did something a little different here, too. I used my basic quiche recipe that you can find on this link and then instead of adding all of the cheese, I added a couple of handfuls feta to the mixture before cooking. I have a ton of feta that I got for free to use up and this was a great way to incorporate it. It came out REALLY good.
The other recipes I have with feta that I plan to use are Spinach & Feta Stuffed Chicken and also Turkey & Spinach Feta Burgers. Spinach and Feta seem to go so well together. If anyone else has any that they'd like to share, I'd love to have them!
