No Bake Chocolate Peanut Butter Oatmeal Bars


These little squares are VERY tasty! I saw this recipe yesterday on Buns In My Oven and knew I had to make them. I didn't have any semi-sweet chocolate chips, only milk chocolate chips, so I am sure my version tasted a little different but they are still really great. They almost melt in your mouth. We rarely make dessert and these aren't exactly healthy, but at least they have a few healthy elements in them, those being the peanut butter and the oatmeal. Not too bad for a dessert and I love that they don't require baking.

I'll post the recipe and then I took a few pictures while I was making this so I will post those. It was really super easy. The hardest part was waiting for them to cool in the fridge before eating them. But it was worth the wait!

No Bake Chocolate Peanut Butter Oatmeal Bars

Ingredients:

3/4 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup semi-sweet chocolate chips
1/2 cup peanut butter (smooth or chunky)
1. Melt butter in a large sauce pan over low heat. Stir in brown sugar, vanilla, and oats. Cook for 3 to 4 minutes. Press half of mixture in to the bottom of a buttered 8 x 8 dish.

2. In a microwave safe bowl, microwave the chocolate and peanut butter, stirring every 30 seconds until melted and blended. Pour the chocolate peanut butter mixture over the crust, reserving a couple of spoonfuls to drizzle over the top.

3. Sprinkle the remaining oat mixture over the chocolate and peanut butter, pressing gently to form a crust. Drizzle the remaining chocolate and peanut butter over the top of the bars.

4. Refrigerate for 3 hours before cutting and serving.

Oh man. I stay far away from recipes like that. LOL It's the same reason I don't look at anything by Paula Dean. It usually does taste good but there's so much fat and calories, and then my kids get a taste for that sort of food instead of the fruit and fresh bread and such.

On a whim, I looked up the original on allrecipes. It's over 4,500 calories for a small pan. Wow! And none of us have the kind of will power to stretch that over a few days. :)

I'm sure it's delicious though! I would totally gobble it up.

Yeah my kids didn't eat it. They never even knew it was there. :)
I ate 2 pieces and my husband ate the rest (we just finished them, so it made it at least most of the week. LOL It was SUPER rich, not something I will make often, that is for sure (we rarely ever have dessert anyway). But it was good!
