Meal Planning: April 19 - 25

Well we ended up going out of town last Saturday so we did not eat our meal that day, we ate out. So that bumped the Saturday's meal last week to Sunday so I will be making the meal planned for last Sunday this week instead.

So, on to this week. We still have a few things in the freezer that I will be trying to use up, one of those being a whole spiral sliced ham. I also have some phyllo dough that I have been meaning to use. So I am going to be trying 2 new recipes this week as well.


Monday:
Breakfast - Oatmeal with Bluberries, Pears
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit
Dinner - Whole Roasted Chicken, Carrots, Potatoes


Tuesday:
Breakfast - Eggs and Cheese with side of sliced Strawberries & Bananas
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit
Dinner - Skillet Chicken Pot Pie (made with leftovers from previous night, plus additional vegetables)


Wednesday:
Breakfast - Whole Wheat Blueberry Pancakes
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit
Dinner - Blackbean & Avocado Tacos with Lime


Thursday:
Breakfast - Oatmeal with Bluberries, Pears
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit
Dinner - Ham, Scalloped Potatoes, Green Beans


Friday:
Breakfast - Eggs and Cheese with side of sliced Strawberries & Bananas
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit
Dinner - Leftover Ham, Scalloped Potatoes, Green Beans


Saturday:
Breakfast - Ham with Buttermilk-Chive Biscuits
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit or possibly out on the weekend
Dinner - Ham & Pineapple CousCous Salad

Sunday:
Breakfast - Whole Wheat Blueberry Pancakes
Lunch - Leftovers or if no leftovers available then Sandwiches with Raw Carrots & Fruit or Possibly out on the weekends
Dinner - Spinach & Feta Phyllo Cups, Last of the leftover Ham if there is any

It seems I spend all my time trying to use food items up before they go bad or expire. It's quite a challenge, but I think that's what brings out our creative side.
