The Leftovers Dilemma

So it seems like I always have an issue with leftovers. If I don't plan a specific night in our weekly meal plan to have leftovers for dinner then we have way too much food that week and end up having to bump a meal off the plan so that we don't waste food. Then if I do plan a night for leftovers, we eat all the food up early and then have nothing to eat the night that was supposed to be for leftovers. Then I end up having to improvise something, which isn't too bad, but that kind of defeats the purpose of meal planning. I thought I had gotten pretty good at figuring out which meals we would have leftovers from and plan accordingly but it seems things are changing and we are eating more of some and less of others. Oh well, it is not a big deal and I will just make something else but I just find it a bit ironic how it always works out!

Does anyone else have this problem?

Leftovers are really handy around here because we're all on our own for lunch (big kids and I help the little ones) and there's at least one ready-cooked meal available at any time for people who don't want sandwiches and cottage cheese and stuff like that. :)

I especially love leftover veggies because I like having healthy lunches but I never want to take the time to make veggies from scratch for just me for lunch. If there's leftover broccoli or anything like that, then Alex and I can gobble that up.

I try to make extra at dinner time just so we have that sort of instant meal option for lunches later.

Sometimes you just have to get creative. Use leftover noodles to make a cold pasta salad, leftover veggies in a soup etc. We generally don't have a problem with that in our house. Dad decides that he's going to eat it all for his lunch and then later asks, why don't you use leftovers for dinner!! There's usually nothing left to use!
