
So last night we were supposed to have Quiche for dinner. Well... we did, but without the crust. I just did not feel like making the crust last night so I went the easy way and just made it in a baking dish without the crust. I didn't really use a recipe for this, but it turned out OK. It was a little different texture than normal, I think because I added sour cream to it this time, which I have not done before. It still had a good taste though. I do not have exact amounts for this, because I did not measure anything, but here is my guess as to amounts of what I added. 4 eggs, 8 oz mushrooms (cooked in skillet), clove of garlic (also cooked), 1/2 cup frozen spinach (cooked a minute to get the moisture out), 1/2 cup milk, 1 cup shredded cheese some of it in the mixture and then some on top the last 10 minutes, 1/2 cup sour cream, salt, nutmeg. I mixed it all together, poured it in the dish, and baked it about 55 minutes on 350.
I served this to my kids with raw baby carrots. My4 year old son ate all of his, asked for more, and then also wanted a banana and a pear. My 2 year old daughter ate all the carrots and did not love the mushrooms in this, but she did eat the other parts.
