Crockpot Chicken & Blackbeans

This is not a pretty dish by far, but it is so yummy! I have made this meal several times in the past and we had it again last night. It  is always a tasty dish and *very* easy to make! We have it once every month or two I would say.

It is chicken breasts that you place in the crockpot (they can even be frozen, so bonus if you are short on time or didn't defrost in time). I used 3 breasts this time but I have done this same recipe with up to 6 breasts, so use what your family will eat. Then you put a jar of salsa on top of the chicken, I usually use the Amy's Organic one because we love it. After the salsa, you add black beans on top, either 1 can or the equivalent in fresh. Normally I am not a fan of canned fruits or veggies but for this meal I will usually use the organic canned ones since I am usually going for super easy when I make this dish. It also usually has corn added to it as well (for this I will use the frozen organic kernels even though the original recipe said to used canned corn, we just never buy that) but I did not add any corn in it this time. The recipe says to cook on high for 4 hours, which will work, but I usually do low on 6 hours. Just make sure your chicken is done before serving for whatever time you choose. In the last 30 minutes you add a bar of cream cheese to the mixture and let it melt into a nice creamy sauce. This is also when I start my rice on the stove (we usually have white rice with this, I'm not a fan of it with brown rice, but if that is what you like then start making the rice earlier!). It's not really quite good for being so easy to do!
