Honey Baked Lentils

Last night for dinner we made "Honey Baked Lentils". I have made this recipe before and everyone loved it, so we decided to make it again. It was also a hit this time. The kids just gobble it up and ask for more, which was surprising to me, especially for my son, who does not care for beans that much (unless refried!). Lentils have a bit of that same texture so I wasn't sure he would like it, but he really loved them. We served it with steamed broccoli and baked sweet potatoes. It doesn't look that pretty, but it was a really delicious meal! I will definitely be making this recipe again, I am sure.

Of course, I did change a couple of things. Seems I can never just leave a recipe as is. I didn't have an onion so I left that out of the recipe. It doesn't exactly say what to do with the onion in the recipe but I assume you would dice it and add it in. Also, this recipe says to bake them for 1.5 hours, but mine weren't all the way done until about 2 hours in. Here is the recipe in it's original form. I don't know who wrote this but it came from my yahoo food group, Families Eating Healthy.

HONEY BAKED LENTILS
1 cup lentils (I use red)
2 cups water
2 tbsp honey
2 tbsp soysauce or tamari
2 tbsp olive oil
1/2 tsp ginger
1 clove garlic
1 small onion
salt & pepper to taste
Bake in a covered dish at 350 until tender (about an hour and a half).
You could also substitute 1/3 cup of rice or barley for some of the lentils...and add whatever "winter" vegetables you have on hand.


*edited - I have now learned this recipe came from the mothering.com discussion board originally before it was posted on the Yahoo! group! I will see if I can find the original author on there so that I can note it here!

I know this post is fairly old, but I have a question that I can't seem to find the answer for. :) Should I use fresh ginger or the powdered stuff? Does it matter?

I don't think it matters, but I usually used powdered because that is what I keep on hand. :)
