My husband loves this and the kids like it as well. I just sort of made it up because I couldn't find a recipe like I was looking for, but I did take inspiration from several other recipes.
Some of these amounts do vary each time I make it, though. I just taste the sauce and see what it needs more of before putting it into the oven. I also often double this so that I have some leftover since my husband likes to take it to lunch with him during the week also.
I usually serve it over rice and with a green vegetable like green beans or broccoli.
Teriyaki Chicken Bites

1.5-2 pounds chicken breast, cut into bite size pieces
1 tablespoon cornstarch (or use 1 tablespoon of butter, mixed with 1 tablespoon of flour, and skip the water below... just melt butter in skillet and combine with flour until it is all mixed in, either will work for a thickener)
1 tablespoon cold water
1/4 cup honey
1/2 cup brown sugar
1/2 cup soy sauce
1/4 cup apple cider vinegar
1/2 teaspoon ground ginger
1/2 tsp garlic powder
1/2 tsp pepper
Preheat over to 375. In a skillet or pan over low heat combine the water and corn starch until well blended and then add all other ingredients except chicken. Keep on low until sauce thickens up a bit and stir frequently. Place the bite sized chicken pieces in a greased 8x8 (or similar sized) dish. Poor the sauce over the chicken and place in oven. Let cook for 20 minutes or so and then stir the pieces around. Let cook for 10 more minutes or until chicken is done. Serve over rice or eat by itself.
