Zucchini Quiche... mmm

So, we've had this before. It's so good and great for a vegetarian night. It's also great for breakfast, too.


Here is the recipe...

Zucchini Quiche

All ingredients organic
3/4 cup chopped onion, slighly sauteed
2 tablespoons olive oil
1/3 cup parmesan cheese, grated
5 eggs, beaten
3 medium zucchini, grated
1 cup whole wheat pastry flour
1 tsp. baking powder
1 cup mild cheddar cheese, shredded
1/2 teaspoon sea salt

Mix the baking powder and flour together and set aside.
In a large bowl, combine all other ingredients first, then add in flour mixture. Pour into a 9 x 13 dish and bake at 350 40 minutes, or until knife inserted in the middle comes out clean.
*Note - if you really enjoy cheese, some melted on top of this the ast 10 minutes or so would be great!
