Cheesy Chicken Broccoli Rice

This is one of the hubby's favorite recipes. It's just shredded chicken, broccoli, rice, and cheese all mixed together and then topped with MORE cheese and baked in the over until its bubbly. He loves it and it's easy. Everything was organic, too, so that is a plus. I have tried adding a can of organic cream of chicken soup to make it more creamy but I prefer making the binding ingredient myself. I usually make a homemade version with mushrooms using flour, butter, and milk. I'm sorry I don't have exact measurments. I've made this one so many times I just sort of put it together at this point. This makes a ton so we *should* have leftovers, but my husband ate more than half of the pan of this last night so there is only about 1/4 of it left. :)

I made this last night and it was so good! I made the homemade soups that go into it too. We are having leftovers for lunch today and it is so yummy even leftover!
