Cheese & Bean Quesadillas

We had the refried black bean & and cheese quesadillas. They are so yummy! We also had quacamole with them as well. Everyone enjoys these. I just use Amy's Refried Black Beans with low sodium, whole wheat tortillas, and organic cheddar cheese. I just use a pan and lightly toast the tortilla in olive oil, then spread on the black beans and put the cheese on top of that. I fold it over and then flip it to give the cheese time to melt and make it nice and crispy. For the guacamole I just use 2 avocados, salt, garlic powder and then if we have it I add in a little diced tomoato and red onion. If you like it hot you can dice part of a jalapeno in there, too, but we skip that part.

The Quesadillas sound really good! We have recently tried refried black beans and they are tasty! Do you make your own tortillas? If so do you have some good secrets that make it easier? I always end up paying to much for whole wheat ones at the health food store cause I'm to lazy to make my own. Do you make up a bunch and freeze them? We love mexican food at our house. My husband says he could eat it every night! ;)

And thanks for the info on the steel cut oats. I look forward to trying them this winter!

Great idea! My family loves these. Ever since we tried them, someone is eating them at least once a week... a late night snack for dad, dinner for the boys...
