OK so that might sound weird, but it tastes great! It also doesn't look that great, but again, it has a great flavor, and it is SO easy to make. This makes enough for 2 nights for our family. I also make rice to go with it. I have done yellow rice before, too, and it is yummy with it. Here is the recipe, try it sometime when you need an easy meal for your family.
(Note from Rachel - I used all organic versions of the ingredients called for. I used 5 boneless, skinless chicken breasts. Mine were cooked on high for almost 4 hours. Also make sure to have your cream cheese softened ahead of time and stir it in well after it's melted. I also used frozencorn and black beans that I previously made and had in the freezer instead of canned stuff. )

Crock-pot Chicken W/ Blackbeans and Cream Cheese...yum!
I love this recipe for two reasons...one...my family loves it and two because it is so easy to make!
4-5 boneless chicken breasts
1 (15 1/2 ounce) can blackbeans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese
4 servings
1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into
crock-pot.
2. add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn
drained.
3. Keep in crock-pot on high for about 4-5 hours or until chicken
is cooked.
4. Add 1 package of cream cheese (just throw it on top!) and let
sit for about 1/2 hour.
5. All done and enjoy!

Yummy! I used 2 cans of beans because I love beans and the husband bought fat free cream cheese. The child didn't like it but she doesn't like much that is mixed together with sauce so I wasn't shocked.

I do a similar thing with chicken and black beans, but I love the idea of adding the cream cheese. I'm going to have to try that!
