
We tried something new tonight, tuna biscuits. They were surprisingly good! We had some tuna we needed to use from the pantry and I had leftover green onions from last nights meal so this was easy and cheap, especially when making your own biscuit dough instead of using canned stuff. I didn't use quite as much relish and I used more mayo than it said, too. We also made sweet potato "fries" in the oven to go with this.
Tuna in Biscuits
1 can (6 oz.) tuna
2 Tbs. mayonnaise
2 Tbs. sweet pickle relish
2 green onions, minced
3/4 cup Monterey Jack cheese, shredded
salt and pepper to taste
1 can refrigerated biscuits
Combine tuna, mayonnaise, pickle relish, onion cheese, salt and pepper.Press each biscuit in greased muffin pan to form a cup. Spoon tuna mixtureinto each biscuit. Bake at 400 degrees for 8-10 minutes.
