G's Chewy Oatmeal Raisin Cookies

Well my son and I wanted cookies so we decided to make some with what we had around here. I kinda made this recipe up but it came out really good actually! He helped make them and he was so excited about it. Here is the recipe we made up:

G's Chewy Oatmeal Raisin Cookies

3 cups rolled oats
3/4 cup organic raisins (more if you like)
1 1/2 cups organic Sucanat
1 1/2 cups whole wheat pastry flour
1 cup softened organic unsalted butter (2 sticks)
1 1/2 teaspoons organic vanilla
2 teaspoons cinnamon
1 teaspoon salt

Preheat oven to 350 degrees. Use mixer and cream together butter, Sucanat, vanilla, cinnamon, and salt. Gradually add in the flour and stir. Then stir in the oats and finally the raisins. Use a spoon and drop large spoonfuls of the dough onto cookie sheets. Bake about 15 minutes or until they are getting golden on the bottom. Let them sit when they come out in order to harden up a bit, but they will still be quite chewy, just be careful not to overbake.
