Ham, Mashed Sweet Potatoes, & Peas

Tonight was yummy! We bought a ham around the holidays when they were on sale and froze it. We baked it tonight and had it with mashed sweet potatoes and green peas. I made a new recipe for the sweet potatoes and they were really good! I thought I would need to add sugar to these before I tasted it like this but it tasted sweet enough without it. I'm glad I waited! I'm so used to the recipe I usually make at Thanksgiving that I just assumed sugar would be needed, now I know better. My son LOVED it by the way. Here it is:

Rachel's Mashed Sweet Potatoes

5 medium sized organic sweet potatoes, baked

2 to 3 tablespoons of coconut oil (I used organic expeller pressed so it had no coconut taste but I think it would be good with virgin coconut oil, too)

2 teaspoons vanilla

cinnamon for topping

Peel warm sweet potatoes and mash in a bowl. Add coconut oil (2 to 3 tablespoons depending on taste) and vanilla and stir together. Sprinkle cinnamon on top and serve while still warm. Simple & Yummy!

Because of this photo, I made mashed sweet potatoes tonight. Yum! I just added a bit of butter and a splash of pumpkin pie spice. Turned out wonderfully!
