Bacon Wrapped Chicken, Roasted Green Beans with Cranberries & Mashed Poatoes

Tonight we had Bacon Wrapped Chicken, Roasted Greenbeans with Cranberries, and Cream Cheese Mashed Potatoes. I also made some mushrooms to top the chicken with and they were really good. I made the mashed poatoes and green beans with my own recipe, but the chicken is one that I made a bunch of a month or two ago and put some in the freezer for later. It was all very good! I'm sure we'll be making these dishes again.

12 boneless skinless chicken breast halves
2 (8 ounce) cartons chive & onion cream cheese
2 tablespoons butter
salt
12 slices bacon

1.Flatten chicken to 1/2" thickness.
2.Spread 3 tablespoons cream cheese over each chicken piece.
3.Dot with butter and sprinkle with salt; roll up.
4.Wrap each with a bacon strip.
5.Place, seam side down, in a greased pan.
6.Bake, uncovered, at 400F for 35-40 minutes or until juices run clear.
7.Broil 6 inches from the heat for 5 minutes or until bacon is crisp.
8.If you are making these ahead for future use, freeze these uncooked on a cookie sheet in your freezer. When solid, wrap and put in a ziplock bag or vacuum seal desired quantities.
9.To cook from frozen state, thaw before cooking and follow directions above.



Rachel's Roasted Greenbeans with Cranberries


1 pound fresh organic green beans, trimmed
handful of organic dried cranberries
1 tablespoon olive oil
salt to taste


Preheat oven to 400. Place a large sheet of foil on baking sheet and put greenbeans on top. Sprinkle with olive oil (you can add more if you like) and then top with salt. Then add the cranberries on top. Wrap the foil around the greenbeans to make a packet, making sure they are completely sealed in. Bake for 35 minutes. Remove and carefully unwrap, the steam will be really hot!



For the cream cheese mashed potatoes I didn't really measure anything. I had about 1.5, maybe 2 pounds of potatoes that were boiled. I added a splash of milk and about 1/4 a bar of cream cheese and mashed them all together. Then I added salt to taste and that was it. This was a last minute thing to use up extra potatoes that I had sliced and didn't know what to do with from when I made the scalloped potatoes.

Okay, I'm not sure how I removed my post--I was trying to edit. haha. I'm probably going to make this chicken next week--it looks sooo good, and I have some onion & chive cream cheese I need to use up.
