Rachel's Roasted Greenbeans with Cranberries
Written By Rachel L - http://cookingformyfamily.blogspot.com
1 pound fresh organic green beans, trimmed
handful of organic dried cranberries
1 tablespoon olive oil
salt to taste
Preheat oven to 400. Place a large sheet of foil on baking sheet and put greenbeans on top. Sprinkle with olive oil (you can add more if you like) and then top with salt. Then add the cranberries on top. Wrap the foil around the greenbeans to make a packet, making sure they are completely sealed in. Bake for 35 minutes. Remove and carefully unwrap, the steam will be really hot!
For the cream cheese mashed potatoes I didn't really measure anything. I had about 1.5, maybe 2 pounds of potatoes that were boiled. I added a splash of milk and about 1/4 a bar of cream cheese and mashed them all together. Then I added salt to taste and that was it. This was a last minute thing to use up extra potatoes that I had sliced and didn't know what to do with from when I made the scalloped potatoes.

Okay, I'm not sure how I removed my post--I was trying to edit. haha. I'm probably going to make this chicken next week--it looks sooo good, and I have some onion & chive cream cheese I need to use up.
This looks super tasty! If you're vacuum sealing food a lot, you might want to try out Vacu-Seal. It's a lot handier than countertops...cordless and handheld, and it uses reusable ziptop bags that can go in the dishwasher and microwave. www.vacu-seal.com
