Chocolate Chip... wait those aren't chocolate chips

So I was going to make chocolate chip cookies... but we don't have any chocolate chips. Upon further review I did notice that we had mini M&M's.... so I took the recipe I was going to use and just replaced the chocolate chips with M&M's. Well actually I only used one cup of M&M's instead of 2 like the recipe said. I also took out the nuts because I don't like them. AND I used less flour (organic of course LOL) than they said as well so the cookie would be softer and less cake like. I also lowered the baking temp to 325 and cooked for 12 minutes. (Why do I use recipes again??? I always change them!) They turned out GREAT! MMMmmmm good. I made half and froze half of the dough for later. :) Oh and my son had a blast helping make these. So far he hasn't asked to eat one... hope he doesn't! These are sweet!

SERVINGS & SCALING Original recipe yield: 4 dozen


INGREDIENTS

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Your *forced* me to head out today and get some mini m&m's to make cookies! I used a similar recipe but I threw in a can of whole chic peas and let it go a couple of rounds in my stand mixer. I also used 3/4 less butter and replaced the last 1/4 with applesauce. And I tossed in some oatmeal. Yum!

BTW, I liked your freezing idea, too. I made little cookies of dough and froze them so I can quickly and easily bake them when I'm ready to have another batch. I tend to make (and eat) too many cookies! But this will be a quick cookie for give-away-meals and treats for meetings. Thanks for the idea!
