Zucchini Casserole


Not sure why it's not called Zucchini Chicken Casserole, but whatever, it was good! :) Here is the recipe, I have no idea where I got it from!

Zucchini Casserole
Ingredients
6 oz packet chicken flavoured stuffing mix
5-6 cups thinly sliced zucchini unpeeled
1 lb. Chicken (cooked & cubed)
1 can cream of chicken, mushroom or celery soup (I used a substitute for this)
1/4 cup chopped onion
1 cup sour cream
1/2 cup butter + 1/4 cup butter
Garlic powder, salt & pepper to taste
Method
The first thing to do is preheat the oven to 350 degrees. Take a large saucepan add 1/4 cup of butter and melt, add the zucchini & onions and satue' until tendar. Take a medium bowl and put the butter in it and microwave it till melted and then add the stuffing mix and stir until moistened. Spread 2/3 of the stuffing mixture in the bottom of a 9 x 9 inch casserole dish. Take a strainer and drain the zucchini then put it in a bowl and mix with the soup, sour cream, onions and Chicken, season to taste and then pour this mixture over the stuffing mix and sprinkle the rest of the stuffing mix over the top. Put the Zucchini Casserole in the preheated (350F)oven and bake for 45 minutes.

What did you substitute for the condensed soup? Can you suggest a substitution for the stuffing mix?
